I thought I was going to have trouble with the Chief Taster about the avocado filling as he doesn't care for it in a savory dish, but this omelette won him over. When the avocado is combined with eggs, which are high in protein, a California omelette can be a nutritious option for breakfast.

- Spring Onion - added for a slightly sharp flavor. You can omit the onion or substitute it with finely chopped red onion.
- Oil - we use olive oil or avocado oil to cook the omelette but you could use a tablespoon of butter instead.
How to make a California Omlette
This is a quick omelette to make for a tasty high protein breakfast.
Cook the beaten eggs in a frying pan until firm.
Add the fillings on one side of thd pan.
Fold the omelette over and cook.
Serve with slices of avocado.

Ingredients
- 3 large eggs
- 1 avocado, sliced
- 3 cherry tomatoes, chopped
- 1 spring onion, sliced
- ¼ cup baby spinach
- ½ cup Monterey Jack Cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a bowl, crack the eggs and whisk together until well combined. Season with salt and pepper.
- Heat a non-stick skillet or frying pan over medium heat and the oil.
- Pour the beaten eggs in the skillet and tilt the pan to spread the eggs evenly. Let them cook for a minute until the edges start to lift from the pan.
- As the eggs begin to set, use a spatula to gently lift the edges and allow uncooked eggs to flow underneath.
- When the omelette is mostly set but still slightly runny on top, arrange the baby spinach, tomatoes, spring onions and half of the avocado slices over half of the omelette. Sprinkle the cheese over the top.
- Carefully fold the omelette in half over the filling using the spatula.
- Let it cook for another minute or two until the cheese melts and the eggs are fully set.
- Slide the omelette onto a plate.
- Garnish with the remaining avocado slices. Serve hot.
