California omelette is a delightful dish that combines health, flavor, and creativity in one easy recipe. Whether you're looking for a quick breakfast or a nourishing meal, this omelette could be a perfect choice.

In a bowl, crack the eggs and whisk together until well combined. Season with salt and pepper.
Heat a non-stick skillet or frying pan over medium heat and the oil.
Pour the beaten eggs in the skillet and tilt the pan to spread the eggs evenly. Let them cook for a minute until the edges start to lift from the pan.
As the eggs begin to set, use a spatula to gently lift the edges and allow uncooked eggs to flow underneath.
When the omelette is mostly set but still slightly runny on top, arrange the baby spinach, tomatoes, spring onions and half of the avocado slices over half of the omelette. Sprinkle the cheese over the top.
Carefully fold the omelette in half over the filling using the spatula.
Let it cook for another minute or two until the cheese melts and the eggs are fully set.
Slide the omelette onto a plate.
Garnish with the remaining avocado slices. Serve hot.
Makes 1 serving.
For fluffier eggs, add 1 tablespoon almond milk, cream or water.
