This strawberry halloumi salad offers a delightful combination of flavors and textures with the sweetness of the strawberries, creaminess of the avocado and grilled salty halloumi cheese. It's a perfect option for a light and refreshing meal, especially during the warmer months.
This is a salad I will make again as soon as I see all three ingredients in our supermarkets at the same time. It is a refreshing and colorful salad that is so easy to make.

What is halloumi cheese?
Halloumi cheese is a semi-hard, unripened cheese that originated in Cyprus. It is typically made from a mixture of goat's and sheep's milk, although sometimes cow's milk is also used.
One of the defining characteristics of halloumi is its high melting point, which allows it to be grilled or fried without completely melting. This gives it a unique texture - crispy on the outside and soft and chewy on the inside.
Are strawberries keto-friendly?
Strawberries can be considered relatively keto-friendly compared to some other fruits because they are relatively low in carbohydrates compared to fruits like bananas or grapes. However, they do contain natural sugars and a 100g serving of strawberries has 7 grams of carbohydrates, 2 grams fiber with grams net carbs.
Ingredients
Grab a few fresh ingredients and you are ready for a quick summer salad.
- Strawberries - fresh and firm with no bruises.
- Halloumi cheese - often sold in supermarkets, specialty food stores and cheese shops.
- Avocado - firm and ripe.
- Dressing - we used a light dressing with olive oil and balsamic vinegar. Lemon juice could be substituted for the vinegar.
- Mint - the fresh mint lifts the salad and goes well with the strawberries, halloumi and avocado. Basil makes a great replacement.
How to make strawberry halloumi salad
Fire up the grill or a griddle pan and you are ready to cook.
Slice the halloumi lengthways and place on a griddle.
Cook the slices of halloumi until golden on both sides.
Mix the salad dressing.
Assemble on a plate and drizzle with the dressing.
Recipe tips
Grill the halloumi slices until they develop nice grill marks on both sides. This enhances their flavor and texture, adding a delightful smokiness to the salad.
To add crunch to the salad, you can include ingredients like toasted seeds (such as pumpkin or sunflower seeds) or chopped nuts. This provides a nice contrast to the creamy avocado and chewy halloumi.
Serve with salad greens or baby spinach for a hearty salad.
Storage
This salad is best served fresh but if you have any leftover, keep it in the fridge in a sealed container and consume the next day.
