- 2 ½ cups almond flour
- 2 large eggs set one egg white aside for coating
- ½ cup monk fruit sweetener or other low carb sweetener
- 1 teaspoon almond extract
- 1 teaspoon baking powder
- ¼ cup almond slices for topping
Instructions
- Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl mix the sweetener, eggs and almond extract together.
- Add the baking powder and almond flour and mix well into a dough.
- Scoop out about a tablespoon of dough and roll it into a ball. Flatten slightly to create a cookie shape.
- Dip into the egg white, then into the flaked almonds.
- Place on the baking tray, leaving some space between cookies. Bake in the preheated oven for 15–18 minutes or until the edges are golden brown.
