These almond cookies are a deliciously nutty treat with a tender texture and a touch of crunch from flaked almond toppings. Naturally gluten-free and sweetened to your liking, they’re easy to make with simple ingredients.

Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl mix the sweetener, eggs and almond extract together.
Add the baking powder and almond flour and mix well into a dough.
Scoop out about a tablespoon of dough and roll it into a ball. Flatten slightly to create a cookie shape.
Dip into the egg white, then into the flaked almonds.
Place on the baking tray, leaving some space between cookies. Bake in the preheated oven for 15–18 minutes or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
To serve, sprinkle powdered sweetener over the cookies (optional)
Makes 22 small cookies.
Store in the fridge in an airtight container.
