These almond cookies are a deliciously nutty treat with a tender texture and a touch of crunch from flaked almond toppings. Naturally gluten-free and sweetened to your liking, they’re easy to make with simple ingredients.

  • Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl mix the sweetener, eggs and almond extract together.
  • Add the baking powder and almond flour and mix well into a dough.
  • Scoop out about a tablespoon of dough and roll it into a ball. Flatten slightly to create a cookie shape.
  • Dip into the egg white, then into the flaked almonds.
  • Place on the baking tray, leaving some space between cookies. Bake in the preheated oven for 15–18 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • To serve, sprinkle powdered sweetener over the cookies (optional)

Notes

Makes 22 small cookies.
Store in the fridge in an airtight container.
