Chicken and Feta Burgers

This chicken feta burger recipe is an easy keto burger packed full of flavour yet moist and packed full of protein.  Gluten free and low carb, these are a perfect burger for summer.

With BBQ season soon upon us, I thought it’s time to start getting some recipes ready.   These chicken burgers can be grilled, cooked on the BBQ or a frying pan.   The beauty of these chicken burgers is that they are so simple to make but full of flavour.

The addition of the Feta cheese keeps these chicken burgers moist and adds a touch of salty flavour.  I was sorely tempted to add chopped black olives and rename them “Mediterranean Burgers” but perhaps another recipe.  Sun-dried tomatoes would be good too.   Expect a similar recipe with added ingredients but with a different name…

HOW TO MAKE A CHICKEN FETA BURGER

I use chicken breast rather than ground chicken for a good quality burger.  You are free to use ground chicken if you are not as fussy as us.  The ground chicken here is not of good quality and to be honest I only use it to make dog food and any burgers I make are made with chicken breasts.   Great news for my guests, and of course, my dogs get home made food! They are my furry Diva’s.

Although I’ve made 4 chicken burgers from this recipe, they were hearty and thick.  You could happily squeeze out smaller thinner ones and make about 6.   I’ve calculated the nutritional information on 4 though so you might want to adjust.  When looking at one of the chunky chicken burgers in my keto burger bun the Chief Taster proclaimed it was too thick. Minutes later, the plate was cleaned, he looked content and promptly retracted his statement to the kitchen.  I was happy with the retraction and had a smug “told ya” look about me.

You could take this chicken burger recipe and rather than shape them into burger shapes, roll them into walnut size balls, bake them and you have delicious chicken feta meatballs that could be serves with zucchini noodles.  Just like my tasty chicken zucchini meatballs (a shameless plug..sorry!)

Ingredients
  

  • 2 chicken breasts skinless & boneless
  • 1 ½ teaspoons oregano
  • 1 small red onion
  • ½ teaspoon garlic powder
  • 1 oz Feta cheese crumbled
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Mix all the ingredients except the Feta cheese in a food processor and blend.
  • Remove the mixture and place in a bowl. Mix in the Feta cheese.
  • Shape into patties and place on a plate. Cover and put in the refrigerator for at least 30 minutes.
  • BBQ, grill or fry in a pan for about 6-8 minutes each side until golden.
  • Serve in low carb burger buns or with a salad
