Pumpkin & peanut butter chia pudding

The colour of this pumpkin and peanut butter chia pudding could make you think it’s a mango pudding with the chia seeds deceptively looking like passion fruit.  So no, it’s not a tropical taste but the creamy sweet taste of peanut butter and pumpkin.

I tend to make my chia puddings in the evening so that by the time I wake up, I have a delicious pudding awaiting for me at breakfast.

Pumpkin & Peanut Butter Chia Pudding

  • Servings: 1-2
  • Difficulty: easy

INGREDIENTS

1/2 cup pumpkin puree

1/2 cup peanut butter

1 cup coconut milk

2 tblspns chia seeds

Optional – sweetner of choice

Pumpkin & peanut butter chia pudding

METHOD

  • Place all the ingredients in a blender and blitz until smooth.
  • Pour into a couple of glasses/jars and place in the fridge.
  • Leave over night.
  • Eat and enjoy!
