Pizza - Low Carb and Gluten Free

A great low carb and gluten free pizza recipe.  Smother with your chosen toppings and tuck in!

Yes folks, you can still eat pizza on a low carb or gluten free diet!  This base holds well and you can even eat it with your hands, just like the real thing!  You can probably make a garlic bread out of the base too...slathered with garlic butter, add some cheese....sorry, have had to mop up my drool from the keyboard..

INGREDIENTS

2 cups Mozzarella cheese

2 eggs, beaten

2 tblspn ground flax meal

2 tblspn coconut flour

½ tspn baking powder

½ tspn garlic powder

1 tblspn Oregano (optional)

METHOD

  • Preheat the oven to 180C/350F degrees.
  • Combine all ingredients in a bowl and mix well.
  • Place the ingredients on parchment paper and press out into a pizza base, about ¼ inch thick.
  • Bake for 30-45 minutes.

  • Remove from oven, spread with your pizza topping of choice.

  • Grill for 3-4 minutes.
  • Eat and enjoy!
