Flourless Chocolate Pudding

   Chocolate pudding is one of my childhood (and adult) favourites.  Served with chocolate custard and I am purring like a kitten.   The original recipe from Ditch the Wheat (great site, check it out!) almost brought out cheers of joy from our house…a quick low carb, chocolate pudding!  It is a similar concept to the muffin in a mug recipe with ground flaxseed except this recipe has no flour.   I had a play around with it adding other ingredients and every version was delicious.  This is just so simple to make too that even the Chief Taster could whip up one.   The taste is just like a pudding. You could serve it and no-one would guess that there is no flour it in! Just delicious!

The original recipe is lovely by itself but the beauty of it is that you can happily add to it and still get a delicious chocolate pudding.   Although this is cooked in the microwave, apparently you can bake this in the oven.  It takes about 18 min at 180C/350F (I have not tried this yet as wanted my pudding in minutes!).   I served mine with chocolate custard and the childhood memories came flooding back!

I cooked mine in a coffee mug (serves one) and also in a bowl (can serve two).

Flourless Chocolate Pudding


1 egg

2 tblspns cocoa powder (unsweetened)

1.5 tblspns Erythritol (or sweetener of your choice)

2 tblspns coconut milk

1/4 tspn vanilla essence

pinch of salt

1/4 tspn baking soda



  • Add all ingredients EXCEPT the baking soda in a bowl and mix thoroughly.
  • Add the baking soda and gently mix.
  • Pour into your cup or bowl.
  • Cook in the microwave for 2 mins (this may vary slightly depending upon your microwave).
  • Eat and enjoy!

Serves 1 to 2 portions

    is baking soda bircarbonate of sode or baking powder please?

    Can I substitute almond milk or would heavy cream be better?

      Either will work. I even tried this with cream cheese which was delicious.

    Hi Diva,

    What is the sauce the pudding cake is sitting in? How you make the little pond of chocolate looking sauce surrounding your pudding?

      That was a chocolate custard I made with coconut milk. 400ml coconut milk, 3 egg yolks, 1 tspsn vanilla essence, 1 1/2 tblpsn cocoa powder, 2 tblspn sweetener. Beat egg yolks, mix the other ingredients. Add the coconut milk mixture to the eggs gradually whilst whisking. Put on a gentle heat and whisk until thick. If it doesn’t thicken, leave in the fridge overnight to thicken. Voila!
