Chocolate Cookies (With Coconut Flour)

I love the texture of these cookies, they are soft and crumbly with a chocolate taste...what more could a Diva ask for.   They are made with almond butter that is so easy to make yourself, providing have a food processor.   If you can make your own it is much cheaper than being robbed in your health food shop.   I now look at the prices on the jars of almond butter and look for sometime to slap.

INGREDIENTS

1 & ¼ cups almond butter

⅓ cup cocoa powder

2 eggs

2 tblspn coconut flour

1 teaspoon vanilla

¼ cup honey

METHOD

  1. Preheat the oven to 180 C/350F degrees
  2. Mix all the ingredients into a bowl and blend well.
  3. Make into balls of cookie dough in your hands and place on a baking sheet, pressing down to flatten the balls out.
  4. Bake for 10 - 15 minutes
  5. Eat and enjoy

Makes about 6 - 8  cookies.
