How to Make Chicken Chipotle Soup
This could be made in a slow cooker but we made this soup recipe on the stove.
Season the chicken thigh meat.
Saute the onions.
Add garlic and jalapeno.
Add the seasoned chicken.
Add the remaining ingredients and simmer for 30 minutes.
Serve and enjoy.
Storing Leftovers
Let the soup cool to room temperature before storing. This prevents excess moisture buildup and keeps the soup from becoming overly thick. Transfer the soup into an airtight container and refrigerate. It should stay fresh in the refrigerator for up to 3-4 days.
Freezing

Ingredients
- 1 lb boneless, skinless chicken thighs
- 14 oz canned chopped tomatoes
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 chipotle peppers in adobo sauce
- 2 tablespoons adobo pepper sauce
- 2 cups chicken broth
- 1 tablespoon lime juice
- 1 Jalapeno, deseeded and chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Chop the chicken thigh meat into bit sized pieces and place into a mixing bowl. Add 2 tablespoons of the olive oil to the bowl with the cumin, chili powder, salt and pepper. Toss thoroughly to cover the chicken in the seasoned oil.
- Add the other 2 tablespoons of olive oil to a large saucepan on a medium heat. Cook the onion until soft and tender.
- Add the garlic and jalapeno and cook for 2 minutes.
- Add the seasoned chicken meat to the saucepan and cook for 6-8 minutes
- Add the chicken broth, adobe peppers, sauce from adobe peppers, canned tomatoes and lime juice. Stir, cover the pot with a saucepan lid and simmer for 30 minutes.
- Ladle the soup into bowls and enjoy it hot. You can garnish with fresh cilantro or avocado for added flavor and healthy fats.
