    Cauliflower Rice

    This is the basis for the delicious cauliflower pizza dish and a great substitue for rice.  Rice is high carb and sometimes can be missed when you are having a curry dish, stir fried veggies or need to sop up some sauce.  But behold, the almighty cauliflower to the rescue!

    INGREDIENTS

    1 head of cauliflower, cut into florets

    METHOD

    1. Grate the cauliflower either by hand or food processor.
    2. If you have a microwave, cook uncovered for 3 minutes.  No water is required as this method is to reduce the water content of the cauliflower.
    3. If you don't have a microwave, gently stir fry the cauliflower in a frying pan for about 5 - 7 minutes.
    4. Use in the lovely pizza dish, or other cauliflower rice substitute dishes.
