Just 3 ingredients and seasoning are all you need to make these tasty crackers.

  • Almond Flour - Made from finely ground almonds, this gluten-free flour adds a subtle nutty taste and helps create a light, crispy texture. It's high in healthy fats, fiber, and protein, making it a great low-carb alternative to traditional flour.

How to Make Cottage Cheese Crackers

Ingredients
 
 

  • 1 ½ cups almond flour
  • ¼ cup cottage cheese, blended
  • 2 tablespoons chives, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 180C/350F degrees and line a baking sheet with parchment paper.
  • Mix all ingredients in a large mixing bowl and form into a dough. If the mixture is too crumbly, add a tablespoon of water to help bind the mixture.
  • Roll the cracker dough out in between two layers of parchment paper to about ¼ inch thick.
  • Cut out cracker shapes with a cookie cutter and place them on the parchment lined baking tray.
  • Bake for 10 minutes, then turn the crackers over and bake for a further 5 minutes until golden brown.
  • Cool on a wire rack.

Notes

Makes 12 crackers
Size of crackers will vary depending upon the size of the cookie cutter.
For extra crispy crackers, you can leave them in the oven with the heat turned off and the door slightly ajar for an additional 5-10 minutes after baking.
If the crackers lose their crunch over time, reheat them in the oven at 300°F (150°C) for a few minutes to restore their crispiness.
