Cottage Cheese - use plain full fat cottage cheese.
Seasonings - we tried different batches with Smoked Paprika and another with Everything Bagel.
How to Make Cottage Cheese Chips
We made these keto cottage cheese chips in the microwave and also the oven. We found that the mixture spread out in the microwave, so broke the crispy large chip into pieces. Whatever way you make them, spray the parchment paper first with oil to prevent the chips from sticking.
Lightly spray parchment paper with oil.
Spoon cottage cheese onto the parchment paper.
Season to own taste and bake.
For Microwave, spoon cottage cheese over parchment paper.
Microwave for 2 ½ minutes.
Break into pieces.
Cottage Cheese Chip Flavor Suggestions
These keto cottage cheese chips are delicious plain but try these flavor combinations:

Bake in Oven
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

- Drain excess liquid from the cottage cheese using a fine mesh strainer or cheesecloth to help the chips crisp up better.
- Using a spoon or a small ice cream scoop, drop small mounds of the seasoned cottage cheese onto the prepared baking sheet. Flatten each mound with the back of the spoon to form thin, round chips. Ensure they are spaced apart for even baking.

why doesn't this work for me? I spoon out dollops of cottage cheese onto a piece of parchment, add spices, then "nuke" them for 2-3 minutes, but all that happens is they spread out and congeal into one big "pool" of cottage cheese. Which then takes a solid 10 minutes of microwaving before it's all finally in "chip" form. Is there a trick to doing this? or a specific type of cottage cheese that should be used? Or can i bake them in my regular oven for the same results?

It might be the water content of your cottage cheese. If it helps, I had the same problem last weekend and was very "vocal" in it not working! I had found that if you drain the cottage cheese first with a sieve then mash the cottage cheese, it should work. And with less cursing than I uttered last weekend too! Baking in the oven works well but just takes longer. Good luck with the next try!

Angela, I cannot seem to reply to your comment. Sorry for the new post. *Update I was at Whole Foods. It did not feel like going to another grocery store to get the Daisy cottage cheese. All they had Whole Foods was the 365 organic low-fat cottage cheese so I bought this. I have not used the lowfat and I have not used this brand. I blended the cottage cheese until smooth, added garlic powder, onion powder, and some Tony Chachere’s. I did not put them in the freezer, but went ahead and put them in the microwave and set it for six minutes. I just happen to check it at five minutes and they were done. The texture was perfect - more like a potato chip texture a couple of small bubbles (like Lays!) on two of them. They were fantastic! *I have pictures but could not post them…

These are really good! The only way that I have made them is in the microwave because they are working well doing it that way. I did put the cottage cheese in my mini food processor to smooth it out, and added a lot of garlic powder, onion powder, and a couple of shakes of kosher salt. I used a round cookie sheet and put the parchment paper on top of there, sprayed it with nonstick spray, put about a heaping teaspoon for each chip and then put them in the freezer for about five minutes. When I take them out, all I have to do is slide the parchment paper into the microwave. I have been cooking mine on six minutes. They get brown and very crispy and are so good! * not sure if the freezer does anything or not. I thought it might keep them from spreading out so much, but not sure it helps!

I wish that I had looked at your site before I made mine. A. They stuck. B. It took a lot longer than the recommended 30 min. C. I found out I don’t like Everything Bagel seasoning (too salty).
