Arugula, also known as rocket, is an Italian bitter salad green with a peppery flavor that is commonly used in salads. It is commonly used to garnish pizza and eaten by hand. Goat cheese is a tangy cheese known for an especially creamy and soft texture. This salad recipe utilizes the bitterness of arugula, creaminess of goat cheese, and the crunch of walnuts to form the base of the dish.

WHAT IS ARUGULA

Arugula is a leafy green vegetable that belongs to the Brassicaceae family. It is also known as rocket, roquette, or rucola and has a mild peppery flavor. Arugula is widely used in salads, sandwiches, and pesto sauces due to its unique taste. It can be eaten raw or cooked, depending on the dish. Arugula is rich in antioxidants and vitamins such as vitamin K and vitamin C, making it an excellent addition to any diet.

TYPES OF GOAT CHEESE

Goat cheese is a type of cheese made from the milk of goats. It has a distinctive flavor and texture that sets it apart from other types of cheeses. There are many different types of goat cheese available, ranging from soft and creamy to hard and crumbly. Each type has its own unique flavor profile and characteristics that make it ideal for certain recipes or dishes.

Some common types of goat cheese include:

  • Fresh Chevre: A soft and creamy cheese made from fresh goat milk, often served plain or with added herbs or other flavorings.
  • Bucheron: A semi-aged goat cheese that is cylindrical in shape with a distinctive ash coating.
  • Feta: A brined cheese made from goat milk that is often crumbled on top of salads or used in Mediterranean cooking.
  • Pyrenees: A semi-hard goat cheese that is aged for several months and has a nutty flavor.
  • Garrotxa: A semi-hard goat cheese from Catalonia, Spain, with a crumbly texture and a tangy, earthy flavor.
  • Crottin de Chavignol: A small, cylindrical cheese from France with a wrinkled rind and a dense, creamy texture.
  • Pantysgawn: A Welsh goat cheese with a crumbly texture and a mellow, nutty flavor.
  • Caprino: A soft, fresh cheese from Italy that is often flavored with herbs, spices, or truffles

INGREDIENTS

This is a simple salad but packed full of flavor.

arugula salad ingredients
  • Salad leaves - for this salad we used a mix of arugula and baby spinach.
  • Red onion - green onions could be substituted.
  • Cherry tomatoes - ensure that they are ripe and full of flavor. Bland tomatoes offer nothing to a salad.
  • Walnuts - toast them for extra flavor. Pecans could be substituted.
  • Goats cheese - we used a soft goat cheese log but a firmer goats cheese could be used. Feta cheese could be used.
  • Dijon mustard - this has a great flavor for the dressing.
