These tiny caprese skewers are an easy and colourful appetiser. They make a quick keto and low carb snack for parties and picnics.
If you love caprese salad, you will enjoy these light, refreshing and colourful bites on a stick. Not only do they look pretty, they have all the flavour of a caprese salad but in miniature form. A taste of summer or a colourful addition to a Christmas party, these caprese skewers are an easy appetiser throughout the year at any party or celebration.
Good fresh mozzarella and marinating are the key to making a simple appetizer outstanding. I used Bocconcini, which are little fresh mozzarella balls. Bocconcini means “little bites” in Italian so are perfect for this mini caprese skewers! Mini mozzarella balls are sometimes labelled as mozzarella pearls.
When marinating the cherry tomatoes, you could cut them in half, but I wanted to keep them whole for the photos as well as the symmetry on the stick. I kept the marinade simple, but you could add other herbs or perhaps a dash of chilli flakes to it.
If you don’t have time to marinade, pour it over the caprese skewers just before serving. If you are very lucky you can purchase the mozzarella already marinated in oil and herbs. A tip for extra flavour is to rub a slice of fresh garlic on the toothpick.
HOW TO SERVE CAPRESE SKEWERS
If you don’t have time to marinade the tomatoes and mozzarella, drizzle them with pesto and season them well. However fresh and tasty the tomato and mozzarella are, they could be a bit bland without a boost of a marinade. You could serve these caprese skewers with a dip such as an avocado pesto. As well as the colourful dip, the flavour would be great with the tomato and mozzarella.

Ingredients
- 14 Mozzarella balls Bocconcini
- 14 cherry tomatoes
- 14 basil leaves
- 7 black olives cut in half
MARINADE
- 3 tablespoons olive oil
- 1 garlic clove chopped
- 1 teaspoon oregano dried
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Mix the marinade in a ziplock bag (or bowl with lid)
- Add the tomato and bocconcini (mozzarella balls). Shake well and marinate for a minimum of 3 hours (overnight is ideal).
- Assemble the tomatoes, cheese on a medium sized toothpick. Add half an olive on the top with a leaf of basil.
- Drizzle any remaining marinade or pesto to serve.
