Margarita Ice Cream (Low Carb Version)

This is based on the Margarita Ice Cream no churn Nigella recipe but I’ve made it a bit more low carb friendly by using Orange extract and erythritol.    It is an easy ice cream to make as it does not involve an ice cream maker and the result is lovely and creamy and the joy of Tequila!

 

 

INGREDIENTS

125ml lime juice

Zest of 2 limes

2 tblspn Tequila

3 tblspn orange extract

100g powdered erthyritol (I process this in a blender)

500ml double cream

METHOD

  • Pour the juices, orange extract and tequila into a bowl and add the erthyritol.  Mix well until blended.
  • Add the cream and lime zest and whip until fairly firm.
  • Spoon into an airtight container and put in the freezer, ideally overnight.
  • Scoop, eat and enjoy!

Serves 6

Nutritional Info per serving – 303 Calories, 31g Fat, 2g Protein, 4g Total Carb, 0g Fibre, 4g Net Carbs

    Can you tell me what is the carbohydrate total per serving for this dish? Ive made Nigella’s unhealthy version of this before and making it this way looks divine!!! Thank You.

      Hi, I’ve updated the recipe with the nutritional information. It’s 4g Carbs per serving (based on a serving of 6). Enjoy!

    Are you sure on the 3 TABLESPOONS measurement of Orange Extract? That seems like a like of extract, like an entire bottle. Sounds like a great recipe.

      Yes Pat. It’s correct. I make my own orange extract which may be a bit weaker so you may want to add a bit at a time and taste it first. The unhealthy version uses Cointreau!
