Parmesan and Lemon Crusted Baked Fish

Gluten FreeLow Carb

This is a tasty, low carb and gluten free way to eat a piece of fish.   Easy to make and a delicious flavour combination of Parmesan Cheese, parsley and lemon!  Refreshing and easy to make!  My favour type of dish!


I used cod for this recipe, but any other white fish would be good for this recipe too.   I also use almond flour to keep this gluten free and low carb instead of using breadcrumbs.  Although you could use gluten free breadcrumbs instead if you wished.

INGREDIENTS

1/4 cup flat parsley leaves, finely chopped

1/3 cup Parmesan cheese, finely grated

1-2 tblspns almond flour

Grated rind of a lemon

1 tspn olive oil

4 white fish steaks

METHOD

  • Preheat the oven to 200C/400F degrees.
  • Combine the almond flour, parsley, Parmesan cheese and lemon rind together.
  • Press the mixture onto the fish fillets as the topping and place on a baking tray.
  • Bake for 15 minutes until the fish is cooked through.
  • Eat and enjoy!

    Went ahead and mixed the oil into the Parmesan mix to put on fish. Our 2nd time for this...Yum!

    The oil wasn't mentioned. I'm thinking it is used on the naked fish before the coating. We're making it tonight! Thanks!
