IS WATERMELON KETO FRIENDLY?

Watermelon can be consumed in moderation on a keto diet, as it contains natural sugars that can increase carb intake. However, it is relatively low in net carbs compared to other fruits and can be included as part of a well-balanced keto diet.

HOW TO MAKE KETO WATERMELON MIMOSA

Remove the rind and seeds from the watermelon

Place the watermelon chunks in a food processor.

Strain the watermelon puree in a sieve.

Spoon the watermelon in a tall glass and top up with champagne or prosecco.

RECIPE TIPS

The watermelon puree can be made ahead and stored in the fridge. Shake before serving.

If you prefer a sweeter drink, add a tablespoon of low carb sweetener, preferably powdered such as allulose.

The melon puree and champagne can be mixed together in a large jug and served from the jug. Stir slowly to mix the two ingredients.

  • ½ cup watermelon pureed
  • ½ cup prosecco or champagne

Instructions
 

  • Remove the rind and seeds from the watermelon and cut into chunks.
  • Place the chunks into a blender and blend until smooth.
  • Strain the watermelon mixture through a sieve.
  • Pour the watermelon mixture into 2 long glasses.
  • Slowly top up with prosecco or champagne.
  • Serve with a garnish of mint leaves.
