One cup of diced watermelon (152g) contains approximately 11 grams of carbs and 0.6 grams of fiber, resulting in a net carb count of around 10.4 grams. While this might seem high for a keto diet, it can still fit within a daily carb limit, depending on individual needs and goals.

HOW TO MAKE KETO WATERMELON MIMOSA
Remove the rind and seeds from the watermelon
Place the watermelon chunks in a food processor.
Strain the watermelon puree in a sieve.
Spoon the watermelon in a tall glass and top up with champagne or prosecco.
The watermelon puree can be made ahead and stored in the fridge. Shake before serving.
If you prefer a sweeter drink, add a tablespoon of low carb sweetener, preferably powdered such as allulose.
