Watermelon mimosa is a delicious and refreshing cocktail that's perfect for summer brunches and outdoor gatherings.

- ½ cup watermelon pureed
- ½ cup prosecco or champagne
Remove the rind and seeds from the watermelon and cut into chunks.
Place the chunks into a blender and blend until smooth.
Strain the watermelon mixture through a sieve.
Pour the watermelon mixture into 2 long glasses.
Slowly top up with prosecco or champagne.
Serve with a garnish of mint leaves.
