Cream Cheese Pancakes

A fab way to start the day with a low carb and Gluten Free pancake.   I love the versaltity of cream cheese and enjoyed making a pancake out of it!  For the sugar element of the recipe I used coconut sugar but you could use any other sugar substitute. 

I served mine with berries and cream! Yummy!

INGREDIENTS

2oz cream cheese

2 eggs

1 tspn stevia OR 1 tblspn other sugar subsitute

1/2 tspn cinnamon

METHOD

  • Place all the ingredients in a food processor and blitz (or mix by hand).
  • Heat a knob of butter in a frying pan and pour part of the mixture into the pan, covering the pan in a thin layer.
  • Cook for 2 minutes until golden and firm.
  • Flip and cook for a further minute.
  • Eat and enjoy!!
