Broccoli cheddar waffles are a savory twist on the classic waffle, making broccoli and cheddar cheese as the batter to create a delicious and unique dish. No flour, just broccoli, cheese and eggs. A great low carb and gluten-free breakfast recipe.

These easy broccoli cheddar waffles are perfect for breakfast, brunch or even a creative light dinner option. This recipe is for 1 waffle so will need to be increased if you want to make a batch.

What type of waffle maker is used?

For making broccoli cheddar keto waffles, you'd ideally want a waffle maker that can handle a thicker batter with added ingredients like cheese and broccoli, ensuring even cooking and easy release of the waffles.

Keto waffles often have cheese in the batter, which can stick to the waffle plates if they're not non-stick. A good quality non-stick surface ensures the waffles come out easily without tearing.

We used a Dash mini waffle maker but a Belgian Waffle Maker is great too.

Ingredients

This is an easy keto recipe with just 4 ingredients (with an optional seasoning)

  • Broccoli - finely chop the broccoli to ensure even cooking. Fresh broccoli or defrosted broccoli can be used.
  • Cheddar cheese - Use a strong Cheddar cheese for extra flavor. A pepper jack cheddar can be used too.
  • Egg - The egg binds the mixture. We tried it without the egg and it was not successful.
  • Garlic powder - optional but adds flavor. Substitute with any other spices of your choice.
  • Salt

How to make keto broccoli cheddar waffles

This is a quick and easy recipe for one.

Cook until golden and firm.

Recipe Tips

Ensure the broccoli is finely chopped or pulsed in a food processor. Large chunks can make the waffles fall apart and cook unevenly.

Freshly shredded cheese melts better than pre-shredded cheese, which often contains anti-caking agents that can affect the texture of your waffles.

Even if your waffle maker is non-stick, a light spray of non-stick cooking oil before each waffle can ensure a smooth release.

A good indicator that your cheesy broccoli waffles are nearly done is when the steam coming out of the waffle maker starts to lessen. This means the moisture in the batter has mostly cooked off.

Storage

Allow the waffles to cool completely on a wire rack. This prevents steam from building up and making them soggy. If stacking waffles, place a piece of parchment paper between each to prevent sticking.

Transfer the cooled waffles to an airtight container or resealable plastic bag and store in the refrigerator for up to 3-5 days.

Freezing

These broccoli waffles freeze well and can be stored for later. Place the waffles in a single layer on a baking sheet to freeze for about an hour. This step helps keep them from sticking together.

Once slightly frozen, wrap each waffle in plastic wrap or aluminum foil. This extra barrier protects against freezer burn. Place the wrapped waffles in an airtight container or a freezer bag and squeeze out as much air as possible to prevent freezer burn. Waffles can be stored in the freezer for up to 3 months.

Reheating

For the best texture, reheat the waffles in a toaster on a low/medium setting or in an oven preheated to 350°F (175°C) for about 10 minutes or until they're heated through and crispy. If they're frozen, there's no need to thaw them first; they can go straight into the toaster or oven.

If you're in a hurry, you can also microwave them for 30-60 seconds, but this might not retain the crispiness as well as the toaster or oven.

Serving Suggestions

  • Eggs: Any style of eggs pairs wonderfully with these waffles. Think poached or soft-boiled eggs with runny yolks, scrambled eggs or a sunny-side-up egg on top for a rich and satisfying meal.
  • Avocado: Sliced or mashed avocado with a sprinkle of salt and pepper can add a creamy texture and healthy fats.
  • Sour Cream or Greek Yogurt: A dollop on top can add a tangy contrast to the savory waffles.
  • Bacon or Sausage: Crispy bacon strips or breakfast sausage links provide a salty, smoky flavor that complements the cheesy and vegetal notes of the waffles.

  • ½ cup Cheddar cheese, grated
  • ¼ cup broccoli, finely chopped
  • 1 large egg
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder optional

Instructions
 

  • Preheat your waffle maker as per the manufacturers instructions.
  • Place all ingredients into a medium mixing bowl and mix well.
  • Lightly spray the waffle maker with cooking spray and pour the batter into the preheated waffle iron, spreading it to the edges. Close the lid and cook according to your waffle iron's instructions, usually for about 5 minutes, until the waffles are golden brown and crisp.
