If you're following a keto diet, it doesn't mean you have to miss out on fun brunch drinks! This keto blueberry mimosa recipe is a refreshing and delicious way to start your weekend. With only a few ingredients, you can make a low-carb, low-sugar version of the classic mimosa that's perfect for anyone watching their carb intake.

The blueberry puree adds a sweet and fruity flavor to the champagne or sparkling wine, making it a perfect drink for any occasion. Plus, it's easy to make and only requires a few simple ingredients

We mix our keto blueberry mimosa in an individual glass but you could mix a larger quantity in a jug to serve a larger party.

CARBS IN BLUEBERRY MIMOSA

The number of carbs in a blueberry mimosa can vary depending on the recipe and ingredients used. However, in general, traditional blueberry mimosas made with blueberry syrup or juice and champagne or sparkling wine can be relatively high in carbs due to the sugar content in the syrup or juice. A typical blueberry mimosa can contain anywhere from 10 to 20 grams of carbs or more per serving.

Using a low carb sweetener reduces the carbohydrate content. This recipe makes a mimosa with just 4g net carbs per serving.

Prosecco or champagne are both low in carbs. It just depends upon your budget as to which bottle of bubbles you use.

HOW TO MAKE A KETO BLUEBERRY MIMOSA

The blueberry mixture can be made ahead and stored in the fridge until you are ready to mix.

Muddle the blueberries with the allulose

Add lime juice to the mixture

Garnish the mimosa with fresh blueberries on a cocktail stick, with lime slices and a mint leaf.

Ingredients
 
 

  • ¼ cup blueberries
  • 1 tablespoon allulose or other low carb sweetener
  • 1 tablespoon lime juice
  • ½ cup prosecco or champagne

Instructions
 

  • Place the blueberries in a tall glass and muddle them until soft.
  • Add the allulose and lime juice and continue to muddle.
  • Strain the mixture and pour into a glass.
  • Top up with champagne or prosecco slowly. Stir gently to mix.
  • Serve immediately.
