- 1 cup (240 ml) heavy cream
- 1 ½ cups (170 g) shredded cheddar cheese
- 1 cup (100 g) cauliflower florets, diced into small pieces (as a potato substitute)
- 2 oz (60 g) cream cheese
- ½ teaspoon paprika
- ½ teaspoon mustard powder
- Salt and black pepper, to taste
- ½ teaspoon xanthan gum (as a flour substitute)
- ¼ cup (15 g) chopped green onions or chives, for garnish
Instructions
- Cook the Ground Beef
- Heat a large pot over medium heat. Add the ground beef and cook until browned, breaking it up into crumbles as it cooks. Remove the cooked beef from the pot and set aside, draining any excess grease.
- Sauté Vegetables
- In the same pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrot. Cook until softened and fragrant, about 5–7 minutes.
- Add Cauliflower
- Stir in the diced cauliflower and cook for another 2–3 minutes.
