    Hibiscus-politan

    Colourful cocktail!

    I have been enjoying lots of hibiscus tea recently and thought that it would be a great mixer too with it's bright red colour and slightly sweet taste.  So I used it instead of cranberry juice in a cosmopolitan.  Lovely and red and tastes less tart that the cranberry juice.

    I made a syrup from the hibiscus by boiling up a cup of hibiscus tea with ⅓ cup of erythtritol.  I am using dried hibiscus for my tea and infusion, but you can also get this in a herbal tea bag.   In place of Cointreau, I used a home made orange extract just to keep the carb content a bit lower.

    INGREDIENTS

    35 ml vodka

    1 cup Hibiscus syrup

    3 tblspn orange extract

    1 tblspn lime juice

    METHOD

    • Put all ingredients into a cocktail shaker with a few ice cubes.
    • Shake and pour into a cocktail glass.
    • Drink and enjoy!
