  • 1.5 lb (680 g) boneless, skinless chicken thighs (diced)
  • 1 tablespoon olive oil or avocado oil
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • ¼ cup (60 ml) water

For the Keto Teriyaki Sauce:

  • ⅓ cup (80 ml) coconut aminos (or low-sodium soy sauce)
  • 1 tablespoon rice vinegar
  • 2 tablespoon granulated keto sweetener (erythritol or monk fruit)
  • ½ teaspoon sesame oil
  • ½ teaspoon xanthan gum (for thickening)

For Serving:

  • 8 butter lettuce or romaine leaves
  • ½ cup (50 g) shredded carrots
  • ¼ cup (25 g) chopped green onions
  • 1 tablespoon toasted sesame seeds
  • ½ avocado (sliced, optional)
  • Red pepper flakes (optional, for spice)

Instructions

  1. Make the Teriyaki Sauce:
    In a small bowl, whisk together coconut aminos, rice vinegar, keto sweetener, sesame oil, and xanthan gum. Set aside.
