Spinach Strawberry Salad

A colourful salad with spinach, strawberries, avocado and goats cheese
- 1 cup strawberries cut in half
- 1 avocado peeled, stone removed and cut into chunks
- 3 cups baby spinach
- 4 oz goats cheese crumbled or cut into pieces
- ¼ small red onion thinly sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- ½ lime juice
- ½ teaspoon salt
- ½ teaspoon black pepper
Put all the dressing ingredients in a bowl and whisk gently to combine.
In a medium salad bowl add the spinach, strawberries, avocado, onion slices and goats cheese.
Pour the dressing over the salad and gently toss.
