Stollen bites offer a delightful combination of sweet, fruity, nutty, and spiced flavors, making them a delicious low carb and gluten-free holiday treat.

Make the Dough
Preheat the oven to 180C/350F degrees and line a baking tray with parchment paper.
In a medium bowl add all the dry ingredients and mix.
In another medium bowl beat the wet ingredients until smooth.
Pour the wet ingredients into the dry and mix well.
Drain the cranberries (if using rum) and stir in the cranberries, candied peel and almond slices until you have a stiff dough that can be shaped.
Shape the dough into bite-sized portions or small oval/rectangular shapes and flatten.
Roll the marzipan into balls for the filling.
Place the marzipan balls in the center of the dough and mold the dough around the marzipan.
Place the stollen bites on the baking tray and bake for 20-25 minutes until golden, turning over half way through for even baking.
Remove the Stollen bites from the oven and allow them to cool completely on a wire rack.
Topping
Brush the stollen bites with melted butter and dip into the allulose or powdered low carb sweetener.

Makes 24 bites but this may vary on the size you make.
