Salad Ingredients

  • 20 leaves romaine lettuce chopped
  • 1 cup mixed baby lettuce leaves or purslane
  • 1 cup tomatoes, chopped or sliced
  • 1 cup cucumber slices English or persian
  • ½ cup red onion, thinly slices
  • ½ cup radishes, thinly sliced.
  • ½ cup fresh mint, chopped
  • ½ cup flat leaved parsley, chopped
  • 1 medium green bell pepper chopped

Instructions

Make the keto pita chips

  • Take 2 low carb tortillas and cut into ½ inch pieces.
  • Heat the olive oil on a medium heat in a pan and add the cut bread pieces.
  • Fry for about 5 minutes until golden and crispy on both sides.
  • Set aside to cool.

Make the dressing

  • In a small bowl add all the dressing ingredients and whisk until combined.

Assemble the salad

  • In a large bowl add the chopped romaine lettuce leaves and scatter the other lettuce leaves over them.
  • Scatter the tomatoes, bell peppers, onions, cucumber and radishes over the lettuce leaves.
  • Pour the dressing over the salad and lightly toss.
  • Add the fried keto pita chips on top of the salad and sprinkle a pinch of sumac over them.
  • Rest the salad for a couple of minutes before serving for the flavors of the dressing and vegetables to develop.

Makes 6 servings as a side salad.
