A sugar free version of the classic cranberry mimosa is a refreshing cocktail for the holidays, brunches or any other celebrations.

Ingredients

Cranberry Syrup

Champagne

  • ½ cup champagne or dry sparkling wine

Instructions

Make the Cranberry Syrup

  • Place the cranberries and low carb sweetener in a pan on a medium heat and simmer for 5 - 7 minutes. Stir occasionally for the juices of the cranberries to break down.
  • Once the cranberries are softened, remove the pan from the heat and use a hand blender for a smoother syrup. Or mash firmly with a fork.
  • Sieve to remove any cranberry skins or pieces.
  • Pour into a glass jar or bottle and allow to cool.
  • Add the lime juice and orange extract. Stir well to combine.

To make the Cranberry Mimosa

  • Spoon 1 to 2 tablespoons of cranberry mixture into a tall stemmed champagne flutes. Top up with the champagne and serve. Give a stir for an even color.

Notes

The cranberry syrup should produce 10 tablespoon. One tablespoon of syrup has 5 calories and 1g net carbs.
