MAKE THE FILLING

Saute onions and garlic

Cook mushrooms and eggplant

Add sun dried tomatoes and seasoning.

Remove from heat and add Parmesan

MAKE THE KETO PASTRY

Mozzarella and cream cheese are melted.

Add almond flour, coconut flour and baking powder.

Add the egg and mix.

Mix into a dough

ASSEMBLE

Roll dough to a rectangle.

Spoon half the mixture on pastry.

Cover with roasted red pepper slices.

Fold pastry over filling

Fold and seal the edges

Brush with egg wash.

Decorate and bake.

Slice and Enjoy!
