- 1 lb Shrimp peeled & deveined
- 1 tablespoon Olive oil
- 2 Cloves garlic minced
- 1 tablespoon Soy sauce
- 1 tablespoon Honey
- 1 teaspoon Sriracha optional for spice
- ½ teaspoon Ginger grated
- 1 head butter lettuce or romaine leaves
- 1 cup shredded carrots
- ½ cup red bell pepper thinly sliced
- ½ cup cucumber thinly sliced
- ¼ cup chopped cilantro
- ¼ cup chopped peanuts optional
- Lime wedges for serving
- ¼ cup Greek yogurt or mayo
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon sriracha optional
Cook the ShrimpHeat olive oil in a pan over medium heat.Add garlic and ginger, then sauté for 30 seconds.Add shrimp, soy sauce, honey, and sriracha. Cook for 2-3 minutes per side until shrimp is pink and opaque.Remove from heat. Prepare the SauceIn a small bowl, whisk together Greek yogurt (or mayo), lime juice, honey, sriracha, and salt. Assemble the WrapsPlace shrimp in each lettuce leaf.Top with shredded carrots, red bell pepper, cucumber, cilantro, and chopped peanuts.Drizzle with sauce. Serve & Enjoy
