This creamy chicken dish in a sun-dried and Parmesan sauce is an easy recipe that is full of flavor. Ready in 30 minutes, it's a great family-friendly low carb dish.

Ingredients

  • 4 chicken breasts, skinless and boneless
  • cup butter or 2-3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup baby spinach leaves optional
  • ½ cup chicken stock
  • ½ cup heavy cream
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon thyme
  • ½ teaspoon oregano
  • ¼ teaspoon red pepper flakes optional
  • ½ cup Parmesan fresh & grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh basil to serve

Instructions

  • Preheat the oven to 190C/375F degrees.
  • Season the chicken breasts with the salt and pepper.
  • Heat half the butter in a large skillet on a medium heat.
  • Sear the chicken breasts for 3-5 minutes on each side. Remove from the skillet and set aside.
  • Add the remaining butter and cook the garlic for 1 minute.
  • Add the stock, cream and herbs and simmer for 3-4 minutes.
  • Stir in the sun-dried tomatoes, Parmesan and spinach.
  • Return the chicken breasts to the skillet and spoon the sauce over them.
  • Bake in the oven for 15-20 minutes until the chicken is cooked through.
  • Garnish with freshly chopped basil.
