Grilled Watermelon Halloumi Salad

This unique and delicious grilled watermelon halloumi salad recipe is an excellent summertime salad.
- 4 slices watermelon about ¼ inch thick
- 9 oz Halloumi 1 pack
- ¼ cup mint chopped
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon black pepper
Remove the seeds from the watermelon slices.
Slice the halloumi lengthways in half.
On a medium-high heat BBQ or griddle pan, cook the halloumi and watermelon slices for about 5 minutes each side, until golden brown each side.
Cut the halloumi into cubes and remove the rind from the watermelon. Cut the watermelon in cubes about the same size as the halloumi.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
