A hazelnut flour muffin baked with chocolate and orange flavours

Ingredients

  • 1 cup hazelnut flour
  • 3 medium eggs
  • ½ cup erthyritol or other low carb sweetener
  • cup butter melted
  • cup cocoa powder unsweetened
  • 1 teaspoon baking powder
  • 1 whole orange rind
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 180C/350F degrees. Line a muffin tin with muffin cases.
  • In a medium bowl beat the melted butter and sweetener together.
  • Add the eggs and mix until the mixture is smooth.
  • Add the dry ingredients and the orange rind and mix into a batter.
  • Pour the batter into the muffin cases.
  • Bake for 20 minutes until the muffins are firm.
  • Decorate with melted chocolate (optional)

Makes 7 muffins
