Chocolate and Orange Muffins
Servings: 7 muffins
A hazelnut flour muffin baked with chocolate and orange flavours
- 1 cup hazelnut flour
- 3 medium eggs
- ½ cup erthyritol or other low carb sweetener
- ⅓ cup butter melted
- ⅓ cup cocoa powder unsweetened
- 1 teaspoon baking powder
- 1 whole orange rind
- ½ teaspoon salt
Preheat the oven to 180C/350F degrees. Line a muffin tin with muffin cases.
In a medium bowl beat the melted butter and sweetener together.
Add the eggs and mix until the mixture is smooth.
Add the dry ingredients and the orange rind and mix into a batter.
Pour the batter into the muffin cases.
Bake for 20 minutes until the muffins are firm.
Decorate with melted chocolate (optional)
Makes 7 muffins
