Baked Asparagus Fries

A healthy alternative to french fries using asparagus spears
- 1 bunch asparagus about 15 spears
- 1 egg beaten
- 1/2 cup almond flour
- 1/2 cup Parmesan cheese, grated dried
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Pre-heat the oven to 200C/400F degrees
Trim or snap the tough ends from the asparagus spears
In a shallow dish, mix the almond flour, Parmesan cheese, salt & pepper.
Dip an asparagus spear into the beaten egg, then into the almond flour mixture.
Double dip if the spear is not covered enough.
Place on a parchment lined baking tray.
Bake for 20 minutes, turning the spears over after 10 minutes.
Each spear is 0.5g net carbs
Coconut flour can be used in place of the almond flour. Use 1/4 cup (28g)
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
