Easy cookies made with peanut butter & low sugar chocolate chips for a low carb cookie

  • 1 cup peanut butter unsweetened
  • ½ cup monkfruit
  • 1 medium egg beaten
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 oz chocolate chips low sugar


  • Preheat the oven to 200C/400F degrees.
  • In a medium bowl add the peanut butter and beat with the monkfruit.
  • Add the eggs, vanilla, salt and baking soda. Mix until smooth.
  • Stir in the chocolate chips
  • Spoon large tablespoon pieces onto a greased baking sheet, flattening into cookie shapes.
  • Bake for 25-30 minutes until golden and firm.


Makes 20 small cookies
