Peanut Butter Chocolate Chip Cookies

Easy cookies made with peanut butter & low sugar chocolate chips for a low carb cookie
- 1 cup peanut butter unsweetened
- ½ cup monkfruit
- 1 medium egg beaten
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 4 oz chocolate chips low sugar
Preheat the oven to 200C/400F degrees.
In a medium bowl add the peanut butter and beat with the monkfruit.
Add the eggs, vanilla, salt and baking soda. Mix until smooth.
Stir in the chocolate chips
Spoon large tablespoon pieces onto a greased baking sheet, flattening into cookie shapes.
Bake for 25-30 minutes until golden and firm.
Makes 20 small cookies
