The unique appeal of pineapple whip lies in its smooth, creamy texture, similar to soft-serve ice cream, but without the dairy content.

If you haven't already frozen fresh pineapple, you can cut it into chunks and freeze them on a baking sheet for a few hours until solid.
In a high-powered blender or food processor, add the frozen pineapple chunks, coconut milk, sugar, lime juice, allulose and a pinch of salt.
Blend the ingredients on high until you achieve a smooth and creamy consistency. You may need to stop and scrape down the sides of the blender a few times to ensure all the pineapple is blended evenly.
If you desire a thicker texture, you can place the mixture in the freezer for about 30 minutes to firm up slightly before serving.
Once ready to serve, transfer the pineapple Dole Whip to a piping bag with a star tip or simply use an ice cream scoop to serve it into cups or cones.
