Palak Chicken is a delicious and nutritious dish that combines tender chicken with a rich, creamy spinach gravy. It's packed with flavor and makes a great meal served with low carb rice.

- ½ lb chicken breast, boneless, skinless
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 cup defrosted spinach
- 2 jalapeno chilis, deseeded and chopped
- 1 tablespoon fresh ginger, peeled and grated
- ¼ cup chopped tomatoes (canned)
- 1 tablespoon tomato paste
- 3 tablespoons olive oil
- 4 tablespoons heavy cream or Greek yogurt
Place the fresh ginger and garlic in a blender or food processor and blend into a paste.
Chop the chicken into bite sized cubes and place in a large mixing bowl with the spices and lemon juice. Toss thoroughly.
In large pan or skillet, heat the olive oil on a medium heat and saute the onion for 5-8 minutes until soft.
Add the garlic ginger paste and cook for 2 minutes.
Add the jalapenos and cook for 1 minute, stirring well.
Add the seasoned chicken chunks to the pan and cook for 8 to 10 minutes.
Add the spinach, chopped tomatoes and tomato paste. Stir well.
Cover and simmer for 10 to 15 minutes until the chicken is tender.
Stir in the cream (or yogurt) and serve with a garnish of chopped coriander (optional).
