Palak Chicken is a delicious and nutritious dish that combines tender chicken with a rich, creamy spinach gravy. It's packed with flavor and makes a great meal served with low carb rice.

Ingredients

  • ½ lb chicken breast, boneless, skinless
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup defrosted spinach
  • 2 jalapeno chilis, deseeded and chopped
  • 1 tablespoon fresh ginger, peeled and grated
  • ¼ cup chopped tomatoes (canned)
  • 1 tablespoon tomato paste
  • 3 tablespoons olive oil
  • 4 tablespoons heavy cream or Greek yogurt

Instructions

  • Place the fresh ginger and garlic in a blender or food processor and blend into a paste.
  • Chop the chicken into bite sized cubes and place in a large mixing bowl with the spices and lemon juice. Toss thoroughly.
  • In large pan or skillet, heat the olive oil on a medium heat and saute the onion for 5-8 minutes until soft.
  • Add the garlic ginger paste and cook for 2 minutes.
  • Add the jalapenos and cook for 1 minute, stirring well.
  • Add the seasoned chicken chunks to the pan and cook for 8 to 10 minutes.
  • Add the spinach, chopped tomatoes and tomato paste. Stir well.
  • Cover and simmer for 10 to 15 minutes until the chicken is tender.
  • Stir in the cream (or yogurt) and serve with a garnish of chopped coriander (optional).
