Start by spiralizing the carrots using a spiralizer, creating long, thin carrot noodles. If you don't have a spiralizer, you can use a julienne peeler to create thin strips resembling noodles.
In a medium bowl, combine the coconut oil, lime juice, salt, pepper and jalapeno together to make a dressing.
Place the carrot noodles in a serving bowl.
