This keto peach ice cream is a refreshing and indulgent low-carb treat that combines the sweetness of ripe peaches with a creamy, smooth texture.

Start by pureeing the peeled and diced peaches in a blender or food processor until smooth. For a more textured ice cream, leave some small peach chunks.
In a medium saucepan add the cream, vanilla, sweetener and egg on a low heat and whisk for 3 minutes.
Set aside to cool, then place in the fridge for 2 hours to firm.
Remove from the fridge and gently fold the peach puree into the cream mixture, ensuring an even distribution of the peach flavor. If you prefer a stronger peach flavor, consider adding an additional half peach.
Pour the mixture into a freezer-safe container. Place it in the freezer for about 1-2 hours, just until the edges begin to firm up.
Remove from the freezer and stir the semi-frozen mixture vigorously with a fork or whisk to break up any ice crystals. Repeat this stirring process every 30 minutes for the next 2-3 hours. This step mimics the churning process of an ice cream maker, resulting in a smooth texture.
Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly.
