These softy chewy cottage cheese cookies are a delicious low carb and high protein cookie that are easy to make.

cottage cheese

almond flour

vanilla protein powder

allulose

teaspoon

teaspoon
baking powder
Instructions
Preheat the oven to 170C/350F degrees and line a baking tray with parchment paper.
Blend the cottage cheese in a food processor or blender until smooth.
In a large mixing bowl, add the almond flour, protein powder, salt and baking powder and mix well.
Add the blended cottage cheese and vanilla and stir to combine into a cookie dough.
Stir in any additional flavors such as sugar-free chocolate chips, shredded coconut or chopped nuts (optional).
Use a medium cookie scoop place balls of the cookie dough on the parchment lined baking sheet.
Flatten each cookie slightly with the back of a spoon or your fingers.
Bake for 15 to 18 minutes, keeping an eye on them, so they don't burn.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Makes 10 medium sized cookies.
