These softy chewy cottage cheese cookies are a delicious low carb and high protein cookie that are easy to make.

  • Preheat the oven to 170C/350F degrees and line a baking tray with parchment paper.
  • Blend the cottage cheese in a food processor or blender until smooth.
  • In a large mixing bowl, add the almond flour, protein powder, salt and baking powder and mix well.
  • Add the blended cottage cheese and vanilla and stir to combine into a cookie dough.
  • Stir in any additional flavors such as sugar-free chocolate chips, shredded coconut or chopped nuts (optional).
  • Use a medium cookie scoop place balls of the cookie dough on the parchment lined baking sheet.
  • Flatten each cookie slightly with the back of a spoon or your fingers.
  • Bake for 15 to 18 minutes, keeping an eye on them, so they don't burn.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Makes 10 medium sized cookies.
