Ingredients

  • 2 peaches
  • ¼ cup red onion, finely diced
  • 1 ball fresh mozzarella
  • 1 cup cherry tomatoes, quartered
  • ½ cup fresh basil
  • 1 ripe avocado stone and skin removed, cut into chunks
  • 1 tablespoon olive oil

Dressing

Instructions

  • Wash the peaches, cut in half, remove the stone and cut into quarters.
  • Lightly brush the peach slices with olive oil and heat a grill or griddle pan on a medium heat.
  • Grill the peaches for about 2-4 minutes per side, or until grill marks form and the peaches are slightly softened. Set aside and allow to cool slightly.
  • In a large bowl, place the salad leaves and basil in it. Scatter the tomatoes, red onion and avocado over them.
  • Tear the mozzarella ball into pieces and add to the salad along with the grilled peach slices.

Mix the dressing

  • In a small bowl, add the salad dressing ingredients and whisk until combined.
  • Drizzle the dressing over the salad, lightly toss and serve immediately.
