Ghanaian peanut butter soup, or "Nkatenkwan," is a rich, creamy West African dish made with chicken, peanut butter, and spices. Its bold flavors and subtle heat make it a perfect bowl of comfort soup for a cold day.

Prepare the Chicken
Place the chicken pieces in a large pot, season with salt, and add half of the chopped onion.
Add the chicken broth, then bring to a boil. Reduce the heat and simmer for about 20 minutes, allowing the chicken to cook halfway.
Prepare the Onion Blend
Blend the remaining onion, garlic and ginger with a cup of water until smooth.
Pour the blended onion mixture into a pan and cook over medium heat for about 10 minutes, stirring occasionally.
Combine the Ingredients
Add the onion mixture to the pot with the chicken. Stir in the peanut butter mixture and add the scotch bonnet peppers, tomato paste, chili powder and bay leaf (if using).
Bring the soup to a boil, then reduce the heat and simmer for 30-40 minutes, stirring occasionally to prevent the peanut butter from sticking to the bottom.
Check the seasoning and adjust with salt if needed. If you prefer extra heat, break the scotch bonnet peppers to release more spice.
Remove the bay leaf and discard. Serve the peanut butter soup hot.
Makes 6 servings
Replace the Scotch bonnet pepper for a milder pepper for a milder heat.
The chili powder can be substituted with smoked paprika.
Serve the chicken on the bone or shred it before serving.
