Just 3 ingredients make this delicious strawberry frozen cottage cheese bark. Enjoy as a snack on a hot day!

  • Line a baking sheet with parchment paper. We use a 9 x 13 inch baking tray.
  • Blend the cottage cheese, strawberries and allulose in a high speed blender and blitz until smooth.
  • Pour the blended cottage cheese mixture onto the lined baking sheet and spread it out evenly into a thin layer.
  • Sprinkle any optional toppings such as chopped strawberries, coconut or sugar free chocolate chips evenly over the cottage cheese layer, pressing them gently into the mixture.
  • Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the bark is completely frozen.
  • Once frozen, remove the bark from the freezer and break it into pieces.
  • Serve immediately as a refreshing frozen snack, or store any leftovers in an airtight container in the freezer.
