Ingredients

  • 1 cup cottage cheese, plain
  • ¼ cup pepper jack cheese, shredded
  • 1 tablespoon taco seasoning

Instructions

  • Add the low-fat cottage cheese and taco seasoning to a blender or food processor and blend until smooth and creamy.
  • Place the blended cottage cheese to a microwave safe bowl and add the pepper jack cheese.
  • Microwave it in 30-second increments, stirring in between, until it reaches your desired temperature.
  • Alternatively, place the mixture into a saucepan and heat it gently over low heat until it's warmed through, stirring frequently to prevent burning.
  • Once heated, pour your creamy Cottage Cheese Queso into a serving bowl and enjoy with low carb dips or crudities.
