  • In a medium mixing bowl, combine the shredded cabbage, cottage cheese, eggs, parsley, salt and pepper.
  • Add the almond flour and mix everything well to form patties. If the mixture is too wet, add more almond flour.
  • Using a large cookie scooper or your hands, shape the cabbage mixture into patties.
  • Heat oil in a deep frying pan or skillet over medium heat.
  • Carefully slide the fritters into the hot oil and fry them in batches until they turn golden brown and crispy. Make sure not to overcrowd the pan.
  • Serve and enjoy.

Notes

Makes 10 medium sized patties.
