Make the cheesecake layer

  • In a large mixing bowl, beat the cream cheese and vanilla extract with the sweetener until blended.
  • In another mixing bowl, whisk the whipped cream, then fold into the cream cheese mixture.

Assemble

  • In a glass, crumble a blondie in the base.
  • Cover with the cheesecake mixture.
  • Sprinkle with berries.
  • Repeat until the glass is full and top with cheesecake mixture.
  • Chill until you are ready to serve.
