Wash and the sweet potatoes. You can peel the skin if you prefer.
With a sharp knife cut the sweet potatoes into wedges. Aim for uniform size to ensure even cooking.
Place the sweet potato wedges in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.
In a large mixing bowl, toss the sweet potato wedges with olive oil, ensuring each piece is lightly coated.
Add garlic powder, paprika, salt, black pepper and any other spices of your choice. Mix well to ensure the seasoning is evenly distributed.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Place the seasoned sweet potato wedges in a single layer in the air fryer basket. Avoid overcrowding to ensure they cook evenly.
Air fry at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through cooking to ensure even crispiness. The exact cooking time may vary based on your air fryer model and the thickness of your wedges.
Once golden brown and crispy, remove the sweet potato wedges from the air fryer.
