Avocado Pesto

Ingredients

  • 1 Avocado
  • 1 cup Fresh basil
  • 1/3 cup pine nuts
  • 3 cloves garlic peeled & chopped
  • 1 Lemon Juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Peel the avocado, remove the stone and cut into chunks.
  • Place all the ingredients into a food processor or a blender and blitz until smooth.
  • Season with salt and pepper to taste.
  • Eat and enjoy!
